Electricity is the only source of energy we use, no gas, no petrol, no diesel, no plutonium, nothing else than electricity. Our amazing oven (who's name is Ambrogio if you ever wondered) is fully electric, our induction hob and our traditional hob are both electric, our pasta machine, fridges, freezer, boiler, vacuum machine, mixer, blender, mincer, grater, scale and so on all plugged in.

But what really makes it special, is the source of all this energy... wind, sun & sea! Yep you got it, we run 100% on British renewable energy sources, in our case thanks to Ecotricity.

And to us it really makes a difference knowing that we have the lowest possible impact on this planet and its resources as one of our core values is sustainability aka the ability to feed your hungry tummies with delicious food, without seriously impacting the planet.

Unfortunately, this comes at an higher price than conventional and more common sources of power, and it does impact our operations a bit. However, we strive to keep our energy consumption low (like by using an all LED light set up on the ground floor) to reduce waste and expenditure and truly be as sustainable as possible.

We are absolutely cleaning geeks!

Everything needs to spark so that the food you eat is safe as well as being great. However, did you know that some cleaning products can be toxic for you and for the environment? Plus, they may also have been tested on animals and their containers may have a big environmental impact. 

So, we put a lot of effort in selecting soaps and sanitizers whose ingredient list did not include any phosphates, GMO, petroleum-derived additives and other scary-name harming chemicals. And that's why we felt in love with BioD!

Founded in the 1980s, BioD creates and produces household products that are natural, effective and kinder to the environment (i.e. minimum environmental impact both in their manufacture and use). How? Below their recipe:

  • every one of their product boxes, sprays, hand pumps and bottles contains 100% of their very own product, which is made in their factory in Hull, England;
  • they only use ingredients that are naturally derived or plant-based;
  • none of their products is animal tested (they are approved by Cruelty Free International and the Vegan Society);
  • all of their packaging is made from recycled materials and it is recyclable;
  • none of their products contains: paraben, GMOs, phosphates, glycerin,  urea...

Even though this choice comes with a different price compared to other alternatives on the market, we decided to go for it. Our planet & your health are priceless to us.

For you to bring home the delicious food we prepare, we have selected something that is special too. In fact, the packaging we use is eco-friendly to minimise the impact we all have on the planet. 

Who is helping us to do this? London Bio Packaging, the first company in Europe to put together a range of compostable and recycled packaging products for all of you, take away lovers, since 2005.

Here the two types of packaging we have:

  • Sustain™: made using only renewable resources (in this case plants!). It’s also 100% compostable so after use, please have it collected with your food waste to be turned into compost!
  • Revive™: made using recycled materials. It’s also widely recyclable so after use, have it collected with your paper and plastics to be turned into something useful again!

But we need your help too! For example, always opt for crockery instead of disposable cups when you enjoy your coffee at the shop, or always remember to bring your own bag to take home your delicious meal :)

The coffee we serve is imported exclusively by us and for us from Torrefazione Caffè GM, an independent company that has been operating for more than 40 years in Tuscany.

What makes their coffee so special (on top of the great quality of the beans)?

  • The beans are wood (oak) roasted: and this procedure is completely natural. This is the same technique that was used over a hundred years ago to preserve the fragrance and protect the coffee from the humidity. And this cannot be done under the supervision of machines! During this process, it is of utmost importance to know how to carefully dose cold air and heat in different proportions, something that only a craftman can do.
  • Caffè GM works with a group of shipowners who transport coffee from Central America with sailboats. The result? The environmental impact is significantly reduced. Superb!

Every cup of coffee is so flavoursome and gentle that we challenge you to drink it without any sugar. You will sense and appreciate centuries of coffee blending tradition at every sip. There is only one problem. It will be hard to stop at just one cup!
